Curry
is complex!
Curry is exotic. Curry is divine. Curry is an art, a culture,
and a lifestyle steeped in tradition and devotion.
Simply, Curry is a blend of spices. Spices such as cumin,
cardamom, cloves, cinnamon, saffron, turmeric, pepper, star
anise, are just the beginning... Indians vary the spices and
amounts depending on the meat or vegetable, the region, the
season or occasion. Therefore every region has a variation
of the same recipe. Every Mom cooks it just a little differently.
Therefore, the same vegetable or meat tastes entirely different
depending on the style of cooking. The mixture of spices that
are ground, pounded, blended, and mixed, to cook with is called
Masala.
